Oolong tea is a slightly fermented and semi-oxidized variety of tea. Fresh tea leaves are plucked when they reach their maturity. They are left to wither in sunlight and then shaken gently in bamboo baskets to lightly bruise the edges of the leaves. Next, these leaves are air-dried in the shade and oxidized. The oxidation period for Oolong teas is less than that for Black teas. When the desired oxidation level is reached, the leaves are subjected to roasting at high temperatures to stop further oxidation.
Due to the higher firing temperatures, Oolong teas contain less moisture and have a longer shelf life than Green teas. Traditionally, a step to prolong a tea’s shelf life, roasting also adds considerable flavor and aroma to an Oolong, while balancing out oxidized fruitiness with a deep woodsy undertone.
